Smoked Polish Kielbasa Seasoning

This is the best Polish Sausage Seasoning out there. It ends up really plump and the flavor is spot on.

You can make an excellent low sodium kielbasa using the seasoning without the curing salt. Just do 20 lbs of meat instead of 25.

Either way, I grind through a 1/4" plate, stuff into collagen casings, and apply a light hickory smoke.
