Trail Style Bologna Seasoning


I am from Ohio and very familiar with the trail bologna in Amish country and believe it to be the best tasting bologna anywhere. I have looked for over ten years for the perfect blend of spices to make venison trail bologna. I have now found it. With this seasoning there is no need to add fat, or other spices. Simply use #1 pink cure, special meat binder, and pure venison. Smoke at 180degF until an internal of 160degf and you will have the best bologna, period!!
