Veg Stable 508 is the new replacement for Veg Stable 504 and has twice the strength of 504 at 30,000 PPM of sodium nitrite. Less solids in any marinade / pickle which helps distribution of the nitrite throughout the muscles. 508 is used in the same manner as the previous 504 just less product is needed for curing of product.

Recommended usage rates using the Veg Stable 508

• Bacon – 0.4% meat weight – 120ppm ingoing • Hot Dogs/Sausage – 0.52% meat weight– 156ppm ingoing • Beef Jerky/Sticks – 0.52% meat weight– 156ppm ingoing • Hams– 0.6 – 0.65% meat weight – 180 - 195ppm ingoing • Corned Beef/Pastrami - 0.6 – 0.65% meat weight – 180 - 195ppm ingoing • Dry Cured Bacon – 0.67% meat weight – 200ppm ingoing • Dry Cured Ham – 2.05% meat weight – 625ppm ingoing
